Butter chicken is a hugely popular Indian curry, yet normally contains onion, garlic and cream, making it unsuitable for those treating SIBO. This version packs a flavour punch and tastes just a good as the real thing, without causing any irritation. This dish will become a family favourite as it is easy to make, fills the house with a wonderful aroma and is delicious.

Marinade
- 2 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground ginger
- 1 tsp ground cardamon
- 1 tsp salt
- 1/2 tsp ground paprika
- ¼-½ tsp ground cayennepepper
- 1 cup canned coconut milk
Cauliflower Rice
- 2 cups cauliflower florets
- 1 tbs coconut oil
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp salt
- ¼ bunch fresh cilantro,chopped
Butter Chicken
- 6 free-range chicken thighs, cubed
- 2 tbs coconut oil
- 2 tbs tomato paste
- ½ lemon, juiced
- ½ bunch fresh cilantro, chopped
Method
- To make the marinade, mix all of the spices together in a large bowl. Stir in the coconut milk and mix until thoroughly combined. Add in the chicken pieces, and stir to cover with the marinade. Marinate for at least 6 hours, or preferably overnight.
- To make the curry, remove the chicken pieces from the marinade, reserving the marinade. Heat the coconut oil in a wok or deep frying pan over a medium-high heat. Brown the chicken then add the remaining marinade. Stir in the tomato paste and lemon juice. Reduce the heat to low, and simmer for 10 minutes.
- Meanwhile, make the fragrant rice. Heat a wok over a high heat and melt the coconut oil. Add in the spices. Stir fry for 1 minute, then add in the rice and salt. Stir constantly until the rice is hot and completely covered with the spices. Remove from the heat and stir in the chopped cilantro.
- To serve, divide the cauliflower rice over four bowls and top with the butter chicken. Sprinkle with some extra chopped cilantro. You could also serve this with some steamed vegetables.
Note
- You can also cook this recipe in the slow cooker. Once the chicken has marinated, place all ingredients for the Butter Chicken (except the fresh cilantro) into your slow cooker and cook on low for 6 hours. Cook the rice separately.

This looks delicious. However, which coconut milk does not have gums added? All canned coconut milks contain guar gum and I thought all “gums” are restricted?

I use the Ayam brand of coconut milk as it’s just coconut and water (for the coconut milk) and coconut (for the coconut cream).

Hi Rebecca
I live in Ireland and it’s seem impossible to find coconut milk without gums. Is it absolutely essential to not eat the gums on the bi phasic diet?

Gums are irritants to the gut, which is why we recommend avoiding them. But just do the best you can with the items you can buy locally.

There’s a brand sold at Whole Foods called native forest that has a simple organic coconut milk that contains no additives. Trader Joe’s brand also does not have any additives. You can also get coconut cream and mix with a little water if all else fails. The cream typically doesn’t have additives.

It was included in Phase 1 originally, then Dr Jacobi updated the diet protocol and moved it to Phase 2.

Hello,
Thank you for these recipes. I’ve tried this for my husband and he loves it. But I don’t think he can tolerate cauliflower or even rice. What can be an alternative side dish for someone who needs to be on a very restrictive SIBO diet for the next 3 months?

I like to serve steamed vegetables instead of rice or cauliflower rice. You could steam vegetables your husband can tolerate to bulk up this meal for him.
